I don't have a recipe for ya... SORRY! But I wanted to share with you how the word casserole left a bad taste in my mouth for such a long time until recently.
Every time I thought of a casserole the first thing that would come to my mind is TUNA. Yes, tuna. Then I go to how I am going to feel afterwards.
As I have stated in the past I have put a large focus on my diet and nutrition. I feel so naive for not thinking about my diet and nutrition for being the cause of some health issues. Without side tracking too much, the next thing I think about is how heavy a casserole can be from the dairy used.
Anytime I saw a recipe that used in casserole in the title I would quickly scan past it, because of past experiences. I mean tuna for crying out loud.
I started following a lot of paleo food blogs, and do you know what I kept finding, damn casseroles! So what do I do, test them out! Fuck yeah I do!
Since I don't have any of my own recipes to share as of yet I am going to share recipes that I have fallen in love with! These recipes have made my hectic weeks even easier when it comes to food prep and now I am a casserole girl.
I really need to call them something else because fucking TUNA is still popping into my damn head.
The first one up is Juli from PaleOMG. I absolutely love this chick. If you need a podcast to listen to add hers to your list. I don't watch The Bachelor but I sure do know what the hell is going on because of her, which allows me to keep up with some of the girls at work. She has a ton of casseroles and I am only listing a few.
Chicken Bacon Ranch Casserole
Taco Lasagna Casserole
-This one has a recipe for Coconut Sour Cream is absolutely awesome! Definitely a must try!
Pumpkin Cream Chicken Casserole
The next one I love is Lexi from Lexi's Clean Kitchen. She does gluten free, dairy free, and some paleo friendly recipes. The casserole I am sharing with you from hers I opted out of the beans to make it paleo.
Mexican Breakfast Casserole
If you have a bad taste in your mouth for casseroles I hope this post changes your mind about TUNA! I am obviously still stuck on tuna casseroles, now my stomach hurts, pain from memory.
