I'm sure you're thinking what the hell is an avocado breakfast boat, well whenever I make these I immediately think the avocado is a boat for my food. I absolutely love this recipe because it lets me use avocado, yet again. Anytime I get the chance to use the delicious fruit. YES YOU READ THAT RIGHT, it is technically a fruit.
My S.O. and I love this recipe. We work crazy schedules so on Sundays we get to spend all day together starting with a delicious and filling breakfast. It varies each week depending on what we are in the mood for, like a few weeks ago we were in the mood for Banana Walnut Chocolate Chip Pancakes, I will post a recipe for that soon. I am still tweaking it to my liking.
Avocado Breakfast Boats are super easy to make and a lot of what is used for the stuffing can be made in advance or for other breakfast items, like make ahead breakfast burritos, which was the case this week. You can literally put anything in the avocados and throw them into the oven. I have seen a lot of posts that show egg variations, but I like to have one side of the avocado an egg and the other a sausage mixture.
1 lb Ground Sausage of Choice (I have chosen Chorizo a few times)
1 Red Bell Pepper Diced
1 Yellow Bell Pepper Diced
1/2 a Yellow Onion Diced
1 Cup Sliced Mushrooms
1 Cup of Chopped Broccoli
Salt and Pepper to taste
Saute the Onion and Bell Pepper in a large pan
After the Onion and Bell Pepper is softened, add the Mushrooms
Once Mushrooms are soft add the Broccoli and saute until bright green, just a couple of minutes
After the Broccoli brightens, set aside in a bowl and return the pan to the stove and add the sausage
Cook the sausage, crumbled, and cooked all the way through
Once the sausage is cooked transfer to the bowl with the cooked vegetable mixture
Add Salt and Pepper to the mixture for taste
For the sausage I found some at my local grocery store that was Whole30 Compliant. After we made the mixture we split it up to have some for the avocado boats and the rest for the make ahead breakfast burritos.
Avocado Breakfast Boats
Pre-heat oven to 425 F
Cut the avocado in half, length wise, and remove pit
If you need to have the avocado sit more evenly the side with the skin, slice a thin portion to have the avocado sit flat flesh side up
Remove some of the flesh in a circle from the center to make room for the egg and sausage mixture
In one of the halves of the avocado scoop in the avocado mixture, for the other avocado half crack an egg into the avocado hole
Place in oven and cook for 16-20 minutes or until the egg sets
Once you remove from the oven add salt and pepper or even hot sauce of choice on top
